What to do with Tapenade

I think tapenade is good enough to eat with a spoon, but here are some other ideas:

The snack: Toast slices of french bread and brush with some of the garlic oil from the recipe--suprise! you just made crostini. Spread a bit of tapenade on each slice and enjoy. It's good cold but really good when still warm.

The dip: Mix with cream cheese and sour cream and a bit of a strongly flavored cheese such as feta or percorino romano to make a dip.

The sandwich: Spread a light amount of cream cheese or goat cheese on each slice of bread. Spread a light amount of tapenade on both sides. Top one side with roasted red peppers and some italian parsley (my favorite), escarole (my other favorite) or some other green.

Salad: Toss a few tablespoons with your favorite salad dressed with vinegrette.

Pasts: Toss with pasta and some grated parmesan and chopped parsley for a simple pasta dish.
